Description
This is the best bourbon chocolate pecan pie, combining rich chocolate and toasted pecans with a hint of bourbon.
Ingredients
Scale
- For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup unsalted butter (cold and cubed)
- 1/4 cup vegetable shortening (cold)
- 3 to 4 tablespoons ice water
- For the Filling:
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 4 large eggs
- 1/4 cup unsalted butter (melted)
- 1/4 cup bourbon
- 1 teaspoon vanilla extract
- 2 cups pecans (toasted and roughly chopped)
- 1 cup semi-sweet chocolate chips
Instructions
- In a large mixing bowl, combine the all-purpose flour and salt.
- Add the cold cubed butter and vegetable shortening to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C).
- On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer the rolled dough to the pan and trim any excess.
- Use a fork to prick the bottom of the crust to prevent bubbling.
- Place the crust in the oven and pre-bake for about 10 minutes. Remove from the oven and let it cool slightly.
- In a large bowl, whisk together the light corn syrup, brown sugar, eggs, melted butter, bourbon, and vanilla extract until smooth.
- Stir in the toasted pecans and semi-sweet chocolate chips until evenly distributed.
- Pour the filling mixture into the pre-baked pie crust, spreading it evenly.
- Bake in the preheated oven for 40-50 minutes, or until the filling is set and slightly puffed. The center may still be a bit jiggly, but it will firm up as it cools.
- Remove the pie from the oven and allow it to cool completely on a wire rack before slicing.
- Serve slices of the pie with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
- Indulge in this decadent dessert that perfectly balances the sweetness of the chocolate and pecans with the warmth of bourbon.
Notes
- Chill the dough well for best results.
- Use high-quality bourbon for the best flavor.
- Store leftovers in the refrigerator.
