- Prepare the Pastry Cream: In a saucepan, whisk together milk, sugar, and cornstarch. Heat over medium until simmering, stirring often, until it thickens and bubbles, about 5-7 minutes.
- Temper the Egg Yolks: In a separate bowl, whisk the egg yolks. Slowly pour the warm milk mixture into the yolks while whisking constantly to avoid curdling.
- Cook Until Thickened: Return the mixture to the saucepan over medium heat. Stir continuously for about 5-7 minutes, until it thickens further. Remove from heat, then mix in butter and vanilla. Cool completely in the refrigerator.
- Make the Cookie Dough: Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Combine Ingredients: Add the egg and vanilla to the creamed mixture, mixing until well combined. Gradually incorporate the flour, baking soda, and salt until a smooth dough forms.
- Bake the Cookies: Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets. Flatten them slightly and bake for 8-10 minutes, or until the edges are golden. Cool completely on wire racks.
- Prepare the Ganache: Heat the heavy cream in a small saucepan until steaming. Pour it over the chocolate chips in a bowl. Let it sit for 2 minutes, then stir until smooth and glossy.
- Assemble the Cookies: Spoon the cooled pastry cream onto the flat side of half the cookies. Top with the remaining cookies to form sandwiches. Drizzle with ganache and let set before enjoying!
