Ingredients

  • 2 potatoes, diced
  • 2 cups cabbage, shredded

  • 2 tbsp tomato paste
  • 2 tbsp oil
  • 1 tbsp lemon juice or vinegar

Instructions

  1. Wash, peel, and prepare all vegetables.
  2. Heat oil in a large pot over medium heat.
  3. Sauté chopped onions until soft.
  4. Add carrots and cook for 3–4 minutes.
  5. Add grated beets and tomato paste, stirring well.
  6. Pour in broth and bring to a boil.
  7. Add potatoes and cabbage.
  8. Reduce heat and simmer for 20–30 minutes until vegetables are tender.
