- 3 medium beets, peeled and grated
- 2 carrots, grated
- 2 potatoes, diced
- 2 cups cabbage, shredded
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 2 tbsp tomato paste
- 2 tbsp oil
- 1 tbsp lemon juice or vinegar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Wash, peel, and prepare all vegetables.
- Heat oil in a large pot over medium heat.
- Sauté chopped onions until soft.
- Add carrots and cook for 3–4 minutes.
- Add grated beets and tomato paste, stirring well.
- Pour in broth and bring to a boil.
- Add potatoes and cabbage.
- Reduce heat and simmer for 20–30 minutes until vegetables are tender.
- Add garlic, salt, pepper, and lemon juice.
- Stir well, adjust seasoning, and serve warm.
