Boo-schetta Ghostly Caprese Bites are adorable and easy Halloween appetizers that combine classic Caprese flavors with a spooky twist. These bites feature toasted crostini topped with fresh basil, tomatoes, and mozzarella cheese cut into ghost shapes, complete with olive faces and a balsamic glaze drizzle.

- 1 French baguette, sliced into ½-inch rounds (about 18–20 slices)
- 1 tablespoon olive oil (for brushing)
- 3 large fresh mozzarella slices (or mozzarella log)
- 1–2 Roma tomatoes, thinly sliced
- Fresh basil leaves (1 per bite)
- ¼ cup balsamic glaze
- 4–5 black olives, chopped finely for ghost eyes and mouths
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet, brush with olive oil, and toast for 8–10 minutes until golden and crispy. Let cool.
- Use a ghost-shaped cookie cutter or a small knife to cut the mozzarella into ghost shapes. You can use a straw to poke out eye holes.
- Place one basil leaf on each crostini slice, followed by a tomato slice.
- Add one mozzarella ghost on top of each tomato slice, allowing the edges to drape slightly for a floating effect.
- Use tiny pieces of black olives to create eyes and mouths on the mozzarella ghosts.
- Drizzle lightly with balsamic glaze and sprinkle with salt and pepper. Serve immediately.

- You can use store-bought crostini to save time.
- Use toothpicks or tweezers to place the olive eyes neatly for the ghost faces.
- For a vegan option, use dairy-free mozzarella and balsamic reduction.
- Crostini can be made up to 2 days in advance, and mozzarella ghosts can be cut a few hours ahead. Assemble shortly before serving.
