Instructions
- Rinse the bok choy under cold water and chop it into bite-sized pieces, separating the stalks from the leaves.
- In a skillet, warm vegetable oil over medium-high heat until shimmering.
- Add minced garlic and grated ginger to the skillet, cooking for about 30 seconds.
- Toss in the bok choy stalks and stir-fry for 2 minutes until softened.
- Fold in the bok choy leaves, stir-frying for another 2-3 minutes.
