  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. In a large mixing bowl, whisk together the plain flour, vanilla-flavored protein powder, baking powder, and baking soda until well combined.
  3. In a separate medium-sized bowl, whisk together the large egg, thick greek yogurt, extra-virgin olive oil, honey, and pure vanilla extract until smooth and fully emulsified.
  4. Pour the wet ingredient mixture into the dry ingredients. Gently fold with a spatula until just combined. A few lumps are fine; do not overmix.
  5. Gently fold in the fresh blueberries until evenly distributed throughout the batter. If using frozen, rinse quickly and toss with a tablespoon of flour before adding.
  6. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full. Bake at 400°F (200°C) for 5 minutes. Without opening the oven door, reduce the temperature to 375°F (190°C) and continue baking for an additional 15-18 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Transfer them to a wire cooling rack to cool completely. Enjoy fresh!
