Description
Blueberry lemon yogurt bark is a bright frozen treat made with creamy Greek yogurt, sweet blueberries, and fresh lemon. It offers a refreshing snack that is easy to keep on hand.

- 2 cups Greek yogurt (thick and creamy)
- 2–3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1–2 drops yellow food coloring
- 1 cup fresh blueberries
- 2 tablespoons blueberry puree (blend a handful of blueberries)
- Optional: extra lemon zest for garnish
Instructions
- Line a flat baking sheet with parchment paper.
- Combine Greek yogurt, honey or maple syrup, vanilla extract, lemon zest, and lemon juice in a mixing bowl. Stir until smooth.
- Transfer about one-third of the yogurt mixture into a separate bowl. Add yellow food coloring and mix until the desired color forms.
- Pour the plain yogurt mixture onto the prepared baking sheet. Spread evenly to about ½-inch thickness.
- Drop spoonfuls of the yellow yogurt and blueberry puree across the surface. Swirl gently with a toothpick or knife.
- Scatter fresh blueberries evenly over the top and press them lightly into the yogurt.
- Sprinkle additional lemon zest over the surface.
- Freeze for 3–4 hours, or until completely firm.
- Remove the frozen yogurt from the tray and break into pieces. Serve immediately or store in a freezer-safe container.
