Blueberry Lemon Heaven Dessert: A Refreshing Delight

- For the Lemon Filling:
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 3/4 cups water
- 3 large egg yolks
- 1/2 cup fresh lemon juice

- For the Blueberry Layer:
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- For the Whipped Topping:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt.
- Gradually whisk in 1 3/4 cups of water until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil (about 5-7 minutes).
- In a separate bowl, whisk together 3 large egg yolks. Slowly add a small amount of the hot mixture to the egg yolks, whisking continuously to temper them.
- Pour the egg yolk mixture back into the saucepan. Stir in 1/2 cup of fresh lemon juice, 1 tablespoon of lemon zest, and 2 tablespoons of unsalted butter. Cook for another 2 minutes, stirring until smooth. Remove from heat and let cool slightly.
- In a medium bowl, combine 2 cups of fresh blueberries, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, and 1 tablespoon of cornstarch. Toss gently to coat the blueberries.
- In a small saucepan over medium heat, cook the blueberry mixture for about 5 minutes, or until the blueberries start to soften and release their juices. Remove from heat and let cool.
- In a mixing bowl, beat 1 cup of heavy whipping cream until soft peaks form.
- Gradually add 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract, continuing to beat until stiff peaks form.
- In a serving dish or individual cups, spoon the cooled lemon filling as the first layer.
- Top the lemon filling with the cooked blueberry mixture, spreading it evenly.
- Finally, add a generous layer of whipped topping on top of the blueberries.
- Cover the dessert and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set.
- Once chilled, serve the dessert cold and enjoy the refreshing flavors!
