    • 3 large egg yolks

    • 2 tablespoons unsalted butter
  • For the Blueberry Layer:
    • 2 cups fresh blueberries
    • 1/4 cup granulated sugar
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch
  • For the Whipped Topping:
    • 1 cup heavy whipping cream
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt.
  2. Gradually whisk in 1 3/4 cups of water until smooth.
  3. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil (about 5-7 minutes).
  4. In a separate bowl, whisk together 3 large egg yolks. Slowly add a small amount of the hot mixture to the egg yolks, whisking continuously to temper them.
  5. Pour the egg yolk mixture back into the saucepan. Stir in 1/2 cup of fresh lemon juice, 1 tablespoon of lemon zest, and 2 tablespoons of unsalted butter. Cook for another 2 minutes, stirring until smooth. Remove from heat and let cool slightly.
  6. In a medium bowl, combine 2 cups of fresh blueberries, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, and 1 tablespoon of cornstarch. Toss gently to coat the blueberries.
  7. In a small saucepan over medium heat, cook the blueberry mixture for about 5 minutes, or until the blueberries start to soften and release their juices. Remove from heat and let cool.
  8. In a mixing bowl, beat 1 cup of heavy whipping cream until soft peaks form.
  9. Gradually add 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract, continuing to beat until stiff peaks form.
  10. In a serving dish or individual cups, spoon the cooled lemon filling as the first layer.
  11. Top the lemon filling with the cooked blueberry mixture, spreading it evenly.
  12. Finally, add a generous layer of whipped topping on top of the blueberries.
  13. Cover the dessert and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set.
  14. Once chilled, serve the dessert cold and enjoy the refreshing flavors!
