  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional)
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 325°F (163°C). Grease or line a 9-inch springform pan. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well. Stir in sour cream and heavy cream. Pour into cooled crust.
  3. Bake at 325°F for 50–60 minutes until edges are set and center is slightly jiggly. Cool in the oven for 1 hour, then chill for at least 4 hours or overnight.
  4. Combine blueberries, sugar, and lemon juice in a saucepan. Simmer and thicken with cornstarch if desired. Let cool.
  5. Mix flour, oats, brown sugar, and cinnamon. Add cubed butter and work until crumbly. Bake at 350°F for 8–10 minutes until golden brown.
  6. Spoon the blueberry topping over the chilled cheesecake. Sprinkle crumble topping on top. Garnish with extra blueberries if desired.
