Easy Blueberry Cobbler with Cake Mix


Ingredients

  • 4 cups Blueberries (fresh or frozen, not thawed)
  • 1/4 cup Granulated Sugar
  • 15.25 oz Boxed Yellow Cake Mix
  • 1/2 cup (1 stick) Unsalted Butter, melted
  • 2 tbsp Fresh Lemon Juice (optional but recommended)

Instructions

  1. Preheat the oven to 350 degrees F and spray a 9×13 baking dish with non-stick cooking spray.
  2. Add 4 cups of blueberries to a large mixing bowl and add in ¼ cup of granulated sugar, gently stirring until coated. Pour evenly into the prepared baking dish.
  3. In a large mixing bowl, add 1 boxed yellow cake mix. Melt 1 stick of butter in the microwave and pour over the cake mix. Stir until combined and crumbly.
  4. Use your hands and crumble the cake mix evenly over the blueberries.
  5. Bake in the oven for 35-40 minutes or until lightly golden. Let cool for 10-15 minutes before serving.
  6. If desired, serve with vanilla ice cream or top with whipped cream.

Notes

  • Use fresh blueberries for best flavor.
  • Frozen blueberries can also be used without thawing.
  • For added flavor, lemon juice is recommended.
