  • 1 tbsp lemon juice
  • 1 cup crushed graham crackers
  • 3 tbsp melted butter
  • Fresh blueberries for topping

Instructions

  1. Add blueberries, sugar, and lemon juice to a small saucepan and cook over medium heat, stirring occasionally, until the berries burst and release their juices. Simmer for 5–7 minutes until slightly thickened, then remove from heat and cool completely.
  2. Combine softened cream cheese, Greek yogurt, honey, and vanilla extract in a mixing bowl and whisk until smooth and creamy.
  3. Mix crushed graham crackers with melted butter until the texture resembles wet sand, then press into an even layer on a parchment-lined tray.
  4. Spread the cheesecake yogurt mixture evenly over the graham cracker base, then spoon small amounts of cooled blueberry sauce across the surface.
  5. Use a toothpick or knife to gently swirl the blueberry sauce into the yogurt to create a marbled pattern.
  6. Scatter fresh blueberries over the surface and lightly press them into the yogurt layer.
  7. Transfer the tray to the freezer and freeze for 3–4 hours or until fully solid, then lift from the tray and break or cut into pieces.
