Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup vanilla protein powder (whey or plant-based)
- 1/2 cup cream cheese (softened, or Greek yogurt for a lighter option)
- 1/4 cup almond butter (or peanut butter)
- 1/4 cup honey (or maple syrup)
- 1/2 cup fresh blueberries (or frozen, thawed)
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice (optional, for added tang)
- Pinch of salt
Instructions
- Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats and protein powder. Mix well.
- Add Wet Ingredients: Add the softened cream cheese (or Greek yogurt), almond butter, honey, vanilla extract, lemon juice, and a pinch of salt. Mix until well combined.
- Add Blueberries: Gently fold in the fresh blueberries, being careful not to crush them too much.
- Shape the Mixture: Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the bites on a parchment-lined baking sheet or plate.
- Refrigerate: Place the protein bites in the refrigerator for at least 30 minutes to firm up.
- Enjoy: Once chilled, enjoy the Blueberry Cheesecake Protein Bites as a nutritious snack. Store any leftovers in an airtight container in the refrigerator.
