- 3 large eggs
- 1/2 cup granulated sugar
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 1/2 cup all-purpose flour
- 1 1/2 cups blackberries
- 1 tablespoon powdered sugar (optional, for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Generously butter a 9-inch round baking dish or skillet and set aside.
- In a large mixing bowl, whisk together the eggs and granulated sugar until well combined and slightly frothy.
- Add the milk, heavy cream, salt, and vanilla extract. Whisk again until the mixture is smooth.
- Sprinkle in the flour and whisk until no lumps remain and the batter is silky.
- Scatter the blackberries evenly across the buttered baking dish.
- Pour the batter gently over the berries, letting a few poke through the top.
- Bake in the center of the oven for 40 to 45 minutes, or until puffed, golden at the edges, and just set in the middle.
- Let cool for 10 to 15 minutes. Dust with powdered sugar before serving if desired. Serve warm or chilled.
