- 2 tablespoons black sesame paste
- 1 tablespoon milk
- 3 tablespoons black sesame paste (for filling)
- 2 tablespoons powdered sugar (for filling)
- 1 tablespoon softened butter (for filling)
- 3 tablespoons granulated sugar (optional for rolling)
Instructions
- In a small bowl, mix black sesame paste, powdered sugar, and softened butter until thick and creamy. Scoop teaspoon-sized portions onto a parchment-lined plate. Freeze for about 15 minutes.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt until combined.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
- Add egg and vanilla extract to the butter mixture and mix until smooth. Add black sesame paste and milk, then mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture. Mix until a soft dough forms. Chill in the refrigerator for about 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 2 tablespoons of dough, flatten it slightly, and place a frozen filling portion in the center. Wrap the dough around the filling and roll into a smooth ball.
- If desired, roll the dough ball in granulated sugar. Place cookies on the baking sheet with 2 inches of space between each.
- Bake for 12–14 minutes until slightly spread and cracked on the surface. Let rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
