  • 1 1/2 cups chocolate cookie crumbs (such as Oreo or chocolate graham crackers)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • For the Cheesecake Filling:
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup cocoa powder
  • For the Topping:
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the chocolate cookie crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool slightly.
  4. In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
  5. Add the granulated sugar, vanilla extract, and sour cream. Beat until well combined.
  6. Add the eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.
  7. Sift in the cocoa powder and mix until fully incorporated.
  8. Pour the cheesecake filling over the cooled crust, spreading it evenly.
  9. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  10. Remove the cheesecake bars from the oven and let them cool in the pan at room temperature for about 30 minutes.
  11. Once cooled, refrigerate for at least 2 hours or until fully chilled and set.
  12. Once chilled, spread the cherry pie filling evenly over the top of the cheesecake.
  13. If desired, garnish with chocolate shavings for an extra touch.
  14. Use a sharp knife to cut the cheesecake into bars. Serve chilled and enjoy!
