Ingredients

- 2 (15-ounce) cans black beans, drained and rinsed
- 2 ripe mangoes, peeled, pitted, and cubed
- 2 avocados, peeled, pitted, and cubed
- 2 tomatoes, chopped
- ½ red onion, finely chopped
- ¼ cup fresh cilantro, chopped (adjust to taste)
- Juice of 2 lemons
- Salt and ground black pepper, to taste
Instructions
- Add the drained black beans to a large mixing bowl.
- Gently fold in the mango, avocado, tomatoes, red onion, and cilantro.
- Pour the freshly squeezed lemon juice evenly over the salad.
- Season with salt and black pepper to taste.
- Toss gently until everything is well combined.
- Taste and adjust seasoning if needed, then serve.
