Ingredients

  • 2 ripe mangoes, peeled, pitted, and cubed
  • 2 avocados, peeled, pitted, and cubed
  • 2 tomatoes, chopped
  • ½ red onion, finely chopped
  • ¼ cup fresh cilantro, chopped (adjust to taste)
  • Juice of 2 lemons
  • Salt and ground black pepper, to taste

Instructions

  1. Add the drained black beans to a large mixing bowl.
  2. Gently fold in the mango, avocado, tomatoes, red onion, and cilantro.
  3. Pour the freshly squeezed lemon juice evenly over the salad.
  4. Season with salt and black pepper to taste.
