Bisquick coffee cake is an easy recipe for a soft cinnamon crumb cake with a tender vanilla base and buttery brown sugar topping.

- 2 cups Bisquick baking mix
- 2/3 cup milk
- 2 tablespoons granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- FOR THE CINNAMON CRUMB TOPPING
- 1/2 cup brown sugar
- 1/3 cup Bisquick baking mix
- 1 teaspoon ground cinnamon
- 3 tablespoons cold butter
- FOR THE VANILLA GLAZE (OPTIONAL)
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C). Grease an 8×8-inch baking pan with butter or nonstick spray.
- Combine Bisquick baking mix, milk, granulated sugar, egg, and vanilla extract in a medium bowl. Stir until smooth.
- Pour the batter into the prepared baking pan and spread evenly.
- Combine brown sugar, Bisquick baking mix, and ground cinnamon in a small bowl. Cut in the cold butter until coarse crumbs form.
- Sprinkle the crumb mixture evenly over the cake batter.
- Bake for 22–25 minutes. Check for doneness with a toothpick.
- For the optional glaze, stir powdered sugar, milk, and vanilla until smooth.
- Drizzle the glaze over the warm coffee cake.
