  • 2 tsp baking powder
  • 2 large eggs lightly beaten
  • 2 tbsp Biscoff spread for drizzling
  • 4 pcs Lotus Biscoff biscuits crumbled

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper cases.
  2. Microwave the Biscoff spread for 40 seconds, then transfer to a mixing bowl.
  3. Combine the baking powder with the melted Biscoff spread, stirring well.
  4. Add the lightly beaten eggs and mix until a thick glossy batter forms.
  5. Divide the batter among the muffin cases, filling them about ¾ full, and bake for 30 minutes.
  6. Cool the muffins on a wire rack.
  7. Drizzle warm Biscoff spread over the muffins and sprinkle with crumbled biscuits.
