- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon

- 2 large eggs
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup unsweetened almond milk (or any milk of choice)
- 1/2 cup plain Greek yogurt (or dairy-free yogurt)
- 1 scoop vanilla protein powder
- 1 1/2 cups fresh or frozen mixed berries (blueberries, raspberries, strawberries)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8 or 9×9-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the eggs, almond milk, Greek yogurt, vanilla extract, and maple syrup until smooth.
- Stir the protein powder into the wet mixture and whisk again until no lumps remain.
- Pour the wet ingredients into the bowl of dry ingredients and mix until combined.
- Gently fold in the berries.
- Transfer the mixture to your prepared baking dish and smooth the top.
- Bake for 35–40 minutes, or until golden and set in the center.
- Let the bake cool for at least 10 minutes before slicing.
- Serve warm or refrigerate for later.
