Ingredients

  • 2 large eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla protein powder
  • 1 1/2 cups fresh or frozen mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8 or 9×9-inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, Greek yogurt, vanilla extract, and maple syrup until smooth.
  4. Stir the protein powder into the wet mixture and whisk again until no lumps remain.
  5. Pour the wet ingredients into the bowl of dry ingredients and mix until combined.
  6. Gently fold in the berries.
  7. Transfer the mixture to your prepared baking dish and smooth the top.
