  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 cups mixed vegetables (e.g., carrots, bell peppers, peas, green beans)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef pieces, season with salt and pepper, and brown on all sides for 5-7 minutes. Remove beef and set aside.
  2. In the same pot, sauté the chopped onion for 3-4 minutes until translucent. Add minced garlic and ginger, and cook for another minute until fragrant.
  3. Add curry powder, ground cumin, ground coriander, and turmeric to the pot. Stir to coat the onions and cook for 1-2 minutes to toast the spices.
  4. Return the browned beef to the pot. Pour in the coconut milk and beef broth. Stir to combine. Bring to a simmer, reduce heat to low, cover, and cook for about 30 minutes, stirring occasionally.
  5. Add the mixed vegetables to the pot. Stir to combine and cook for an additional 10-15 minutes, or until vegetables are tender and beef is fully cooked.
  6. Taste and adjust seasoning with salt and pepper if needed. Serve the beef vegetable curry hot, garnished with fresh cilantro.
