- 1 pound Filet Mignon (Substitute sirloin or ribeye for a more robust flavor.)
- 1 teaspoon Kosher Salt (Enhances flavor and draws moisture.)
- 1 teaspoon Freshly Ground Black Pepper (Adjust to personal taste.)
- 2 tablespoons Yuzu Juice (or Lime Juice) (Lime is an excellent substitute if yuzu isn’t available.)
- 2 tablespoons Soy Sauce (or Tamari) (Opt for tamari to keep this dish gluten-free.)
- 1 tablespoon Grated Ginger (Use fresh ginger for the best flavor.)
- 1 teaspoon Sugar (Adjust according to taste.)
- 1 small White Onion (Finely minced.)
- 4 cloves Garlic (The thickness of the slices affects cooking evenness.)
- 1 cup Neutral Oil (for frying) (Used to fry the garlic chips.)
- 2 tablespoons Chives (Sprinkle for an elegant touch.)
Instructions
- Pat the filet mignon dry with paper towels and season with kosher salt and black pepper.
- Heat oil in a heavy skillet over medium-high heat and sear the meat for about 3 minutes on each side until golden-brown.
- Once seared, wrap the filet mignon in plastic wrap and refrigerate for 2 to 24 hours.
- In a bowl, whisk together yuzu juice, soy sauce, ginger, sugar, and minced onion for the ponzu sauce.
- Thinly slice garlic cloves and fry in neutral oil until golden and crispy, about 4-5 minutes.
- Once chilled, slice the filet mignon thinly against the grain, arrange on a platter, drizzle with ponzu sauce, and sprinkle with garlic chips and chives.
