- 2 pounds beef chuck, cut into 1-inch cubes
- 2 cups sliced mushrooms (e.g., cremini or button)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- 2 bay leaves
- Fresh parsley for garnish (optional)
Instructions
- Start by chopping the onions, carrots, and potatoes. Slice the mushrooms and mince the garlic. Set aside.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set it aside.
- In the same pot, add the chopped onions and garlic. Sauté until the onions are soft, about 3-5 minutes.
- Stir in the sliced mushrooms and cook for an additional 5 minutes, allowing them to release their moisture.
- Add the tomato paste and Worcestershire sauce, stirring to combine. Scrape up any browned bits from the bottom of the pot for added flavor.
- Return the browned beef to the pot and add the beef broth, bay leaves, thyme, carrots, and potatoes. Bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let the stew simmer for 2-2.5 hours, or until the beef is tender and the flavors are well melded.
- Once the stew is ready, taste and adjust the seasoning as needed. Remove the bay leaves before serving.
- If desired, garnish the stew with fresh parsley for a touch of color.
