  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 2 bay leaves
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by chopping the onions, carrots, and potatoes. Slice the mushrooms and mince the garlic. Set aside.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set it aside.
  3. In the same pot, add the chopped onions and garlic. Sauté until the onions are soft, about 3-5 minutes.
  4. Stir in the sliced mushrooms and cook for an additional 5 minutes, allowing them to release their moisture.
  5. Add the tomato paste and Worcestershire sauce, stirring to combine. Scrape up any browned bits from the bottom of the pot for added flavor.
  6. Return the browned beef to the pot and add the beef broth, bay leaves, thyme, carrots, and potatoes. Bring the mixture to a simmer.
  7. Reduce the heat to low, cover the pot, and let the stew simmer for 2-2.5 hours, or until the beef is tender and the flavors are well melded.
  8. Once the stew is ready, taste and adjust the seasoning as needed. Remove the bay leaves before serving.
  9. If desired, garnish the stew with fresh parsley for a touch of color.
