- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onion, chopped
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 2 tablespoons flour (for thickening)
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and season with salt and pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onions and garlic. Cook until the onions are translucent, about 3 minutes.
- Stir in the carrots, celery, and potatoes. Cook for an additional 5 minutes until the vegetables begin to soften.
- Return the browned beef to the pot. Add in the tomato paste, Worcestershire sauce, dried thyme, and the beef broth.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for approximately 1.5 to 2 hours, stirring occasionally.
- After simmering, whisk the flour with a little cold water to create a slurry. Gradually stir it into the stew to thicken the gravy. Cook for an additional 10 minutes.
- Taste the stew and adjust the seasoning with more salt and pepper if needed.
- Garnish with fresh parsley if desired and serve hot.
