  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onion, chopped
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 tablespoons flour (for thickening)
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and season with salt and pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onions and garlic. Cook until the onions are translucent, about 3 minutes.
  3. Stir in the carrots, celery, and potatoes. Cook for an additional 5 minutes until the vegetables begin to soften.
  4. Return the browned beef to the pot. Add in the tomato paste, Worcestershire sauce, dried thyme, and the beef broth.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for approximately 1.5 to 2 hours, stirring occasionally.
  6. After simmering, whisk the flour with a little cold water to create a slurry. Gradually stir it into the stew to thicken the gravy. Cook for an additional 10 minutes.
  7. Taste the stew and adjust the seasoning with more salt and pepper if needed.
  8. Garnish with fresh parsley if desired and serve hot.
