This Beef Enchilada Casserole recipe is a family-favorite Tex-Mex dinner made with seasoned ground beef, melted cheese, tortillas, and enchilada sauce.

- 1 pound ground beef
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 2 cups enchilada sauce
- 1 packet taco seasoning
- 10 corn or flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 1 cup black beans (optional)
- 1/4 cup diced green chilies (optional)
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- In a skillet, cook ground beef over medium heat until browned. Add diced onion and cook until soft, then stir in garlic.
- Drain excess fat. Mix in taco seasoning, 1 cup enchilada sauce, green chilies, and black beans if using.
- Spread a spoonful of enchilada sauce at the bottom of the baking dish.
- Layer tortillas, beef mixture, and cheese. Repeat layers and finish with cheese on top.
- Cover with foil and bake for 20 minutes. Uncover and bake for another 10 minutes until bubbly.
- Let rest for 5–10 minutes before slicing and serving.
