- 1 kg Beef Brisket
- 100 g Onion Jam
- 1 cup Corn
- 200 g Cheddar Cheese
- 250 g Plain Flour
- 250 g Self-Raising Flour
- 7 g Dry Yeast
- 1 tsp Salt
- 3 tbsp Whole Grain Mustard
- 1 tbsp Olive Oil
Instructions
- In a large mixing bowl, combine dry yeast, salt, and water, mixing well.
- Gradually add plain and self-raising flours until a smooth dough ball forms. Knead for 5-10 minutes until elastic.
- Transfer the dough to an oiled bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 30 minutes.
- Preheat your oven to 150°C (130°C fan). Place the brisket in a roasting pan with vegetables and stock, then roast for around 12 hours.
- Pull the beef apart into shreds when tender.
- In a small bowl, mix mayonnaise and whole grain mustard until blended.
- Toast the corn in a pan with olive oil over medium heat until golden, stirring for about 5-7 minutes.
- Divide the risen dough into four balls, roll each into a flat base and top with onion jam, shredded brisket, toasted corn, and cheddar cheese.
- Preheat your convection oven to 210°C. Bake the pizzas for about 15 minutes.
- Top with aioli, pickled onions, and rocket. Cut and serve immediately.
