Description

  • 1 lb (450g) beef stew meat (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 1 cup barley (pearl barley works best)
  • 6 cups beef broth (or vegetable broth)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas (added at the end)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef stew meat, season with salt and pepper. Brown meat on all sides for 5-7 minutes. Remove beef and set aside.
  2. In the same pot, add chopped onion, carrots, and celery. Sauté for 5 minutes until softened. Add minced garlic and cook for 1 minute more.
  3. Return browned beef to the pot. Add barley, beef broth, diced tomatoes with juice, thyme, rosemary, and bay leaf. Stir to combine.
  4. Bring the soup to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beef is tender and barley is cooked. Stir occasionally.
  5. If using, stir in frozen peas during the last 5 minutes of cooking. Taste and adjust salt and pepper as needed. Remove bay leaf before serving.
