  • 8 large eggs
  • 6 strips beef bacon, chopped
  • 2 medium potatoes, diced
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives, chopped
  • 1/2 cup cheddar cheese, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden brown.
  2. Push potatoes to the side and add chopped beef bacon, cooking until crispy.
  3. Mix in chopped chives and cook for another 2 minutes.
  4. In a bowl, whisk eggs, heavy cream, salt, and pepper.
  5. Pour egg mixture over the skillet and sprinkle cheese on top.
  6. Cook on low heat until edges set, then transfer to oven at 375°F for 10-15 minutes.
  7. Cool slightly before slicing and serving.
