Ingredients

  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • Butter or oil (for cooking)

Instructions

  1. In a blender or mixing bowl, combine the rolled oats, mashed banana, milk, egg, baking powder, cinnamon (if using), salt, vanilla extract, and honey or maple syrup (if using).
  2. Blend or whisk the mixture until smooth and well combined. Let it sit for about 5 minutes to thicken slightly.
  3. Preheat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
  4. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  5. Carefully flip the pancakes and cook for another 2-3 minutes on the other side until golden brown and cooked through. Repeat with the remaining batter, adding more butter or oil as needed.
  6. Serve the pancakes warm, topped with your favorite toppings such as fresh fruit, maple syrup, yogurt, or nut butter.
