  • 2 large eggs, room temperature
  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/4 cup milk
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
  2. Whisk flour, baking soda, cinnamon, and salt in a bowl.
  3. Whisk melted butter and brown sugar until smooth. Add eggs and vanilla, then mix in mashed bananas and milk.
  4. Add dry ingredients to wet ingredients and mix just until combined.
  5. Gently fold in chopped walnuts.
  6. Divide batter evenly into muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.
  7. Cool for 5 minutes in the pan, then transfer to a rack.
