- 1/2 cup butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs, room temperature
- 1 cup sour cream

- 2 cups all-purpose flour
- 1 tsp baking soda

- 2 medium ripe bananas, mashed
- 8 oz cream cheese, softened
- 1/2 cup butter, softened (for frosting)
- 2 tsp vanilla extract (for frosting)
- 3 3/4 to 4 cups confectioners’ sugar (for frosting)
Instructions
- Preheat the oven to 350°F. In a large bowl, cream the butter and sugar together until light and fluffy, about 5-7 minutes. Add the eggs, sour cream, and vanilla extract, and mix well.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, mixing until combined.
- Stir in the mashed bananas until evenly incorporated.
- Spread the batter into a greased 15×10-inch baking pan. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely.
- For the frosting, beat the softened cream cheese, butter, and vanilla extract together until fluffy. Gradually add powdered sugar and beat until the frosting reaches the desired consistency.
- Spread the cream cheese frosting evenly on the cooled banana bars and serve.
