  • 2 tablespoons Olive oil
  • 2 teaspoons Fresh cracked pepper (divided)
  • 2 teaspoons Celtic sea salt (divided)
  • 1 Yellow onion (diced)
  • 2 medium Sweet potatoes (diced into 1″ cubes)
  • 4 oz Butter (melted)
  • 1/4 cup Minced garlic
  • 1 tablespoon Italian herbs seasoning blend

Instructions

  1. Preheat your oven to 350°F.
  2. Season the turkey breast tenderloins with 1 teaspoon of sea salt and cracked pepper.
  3. Heat a large, heavy pan over medium-high heat and add the olive oil.
  4. Sear the turkey in the hot pan for about 2-3 minutes on each side.
  5. Combine the sweet potatoes and diced onion on a baking sheet.
  6. Arrange the seared turkey in the center of the sweet potatoes and onions on the baking sheet.
  7. Mix melted butter, minced garlic, and Italian herbs in a small bowl with the remaining salt and pepper.
  8. Pour this mixture over the turkey and veggies.
  9. Roast everything in the preheated oven for 35-40 minutes.
  10. Rest the turkey for at least 10 minutes after taking it from the oven.
