Description
Crispy on the outside and tender on the inside, these Toasted Tortellini Bites make a perfect appetizer or snack.

- 1 (20 ounce) package refrigerated tortellini (about 5 cups total)
- 2 large eggs
- 2 tablespoons water
- 1 cup Italian seasoned bread crumbs (not panko)
- ¼ cup grated Parmesan cheese (not shredded)
- 1 teaspoon kosher salt
- Cooking spray (olive oil spray recommended)
- ½ cup marinara sauce, for dipping
- Chopped fresh basil, for garnishing
Instructions
- Preheat the oven to 425°F. Place a wire rack on top of a rimmed baking sheet and spray it with olive oil cooking spray to prevent sticking. Set aside to use later.
- In a shallow dish, whisk together the eggs and water until fully combined and smooth.
- In another shallow dish, combine the Italian seasoned bread crumbs, grated Parmesan cheese, and kosher salt. Whisk the mixture well.
- Place a single layer of fresh tortellini into the egg mixture. Flip each tortellini to coat it thoroughly in the egg wash. Allow excess to drip off.
- Transfer each coated tortellini to the bread crumb mixture. Press the crumbs firmly onto both sides.
- Place the breaded tortellini in a single layer on the prepared wire rack. Spray the tops lightly with olive oil cooking spray.
- Bake in the preheated oven for 15 to 20 minutes, or until golden brown and crisp.
- Remove from the oven and serve warm with marinara sauce on the side for dipping. Optionally, sprinkle extra grated Parmesan cheese and chopped basil over the bites before serving.
