- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup all-purpose flour
- 2 large eggs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup fresh orange juice
- 1 tablespoon orange zest
- ½ cup granulated sugar
- ¼ cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons vegetable oil
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly brush it with oil. Set up two bowls: one with beaten eggs and one with flour seasoned with salt and pepper.
- Dip each piece of chicken into the eggs first, then coat it thoroughly in the flour. Place the coated chicken pieces on the baking sheet in a single layer.
- Bake the chicken for 20–25 minutes, flipping halfway through, until golden and cooked through.
- While the chicken bakes, combine orange juice, orange zest, sugar, soy sauce, garlic, and ginger in a saucepan over medium heat. Let it simmer gently.
- In a small bowl, mix cornstarch and water to create a slurry. Stir it into the sauce and cook until thickened and glossy.
- Once the chicken is done, transfer it to a large bowl and pour the warm orange sauce over the top. Toss gently until every piece is coated.
- Serve immediately over steamed rice.
