Description

Baked German Pancake, also known as a Dutch baby, is light, puffy, and beautifully golden with crisp edges and a soft, custardy center.


Ingredients

  • 3 large eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter
  • Powdered sugar
  • Fresh fruit
  • Fruit compote or preserves
  • Yogurt
  • Honey or maple-style syrup

Instructions

  1. Preheat oven to 425°F (220°C). Place butter in a 10-inch oven-safe skillet and heat in the oven until melted.
  2. Blend or whisk eggs, flour, milk, sugar, salt, and vanilla until smooth and slightly frothy.
  3. Carefully remove skillet, swirl butter to coat, pour batter into hot pan, and return to oven. Bake 18–22 minutes until puffed and golden.
  4. Remove from oven and serve immediately with desired toppings.
