- 1 cup soaked dried chickpeas
- 1 cup fresh herbs (e.g., parsley, cilantro)
- 3 cloves garlic
- 1 tsp smoked paprika
- 1 small onion
- ½ cup flour
- 1 tsp spices (cumin, coriander recommended)
- 2 tbsp olive oil
Instructions
- If using dried chickpeas, soak them overnight in water and drain before using to soften them.
- In a blender, combine the soaked chickpeas, fresh herbs, garlic, grated onion, spices, and flour. Blend until you achieve a coarse mixture.
- Shape the mixture into small patties using your hands. If it feels too soft, refrigerate for a bit before shaping.
- Preheat the oven to 400°F (200°C). Arrange the patties on a baking tray lined with parchment paper and lightly brush with olive oil. Bake for 20-25 minutes, flipping halfway through.
- Let the patties cool slightly before serving warm with tahini sauce or in pita pockets with veggies.
