- 6 bone-in, skin-on chicken thighs
- Salt and black pepper to taste
- 1/2 tsp paprika
- 1/3 cup Dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp honey
- 1 tsp dried thyme (or 1 tbsp fresh thyme)
- 1 tbsp lemon juice
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease or line a baking dish with parchment paper.
- Pat chicken thighs dry and season with salt, pepper, and paprika.
- In a small bowl, whisk together Dijon mustard, olive oil, garlic, honey, thyme, and lemon juice.
- Brush the Dijon mixture evenly over the chicken thighs.
- Arrange chicken skin-side up in the baking dish.
- Bake for 35–40 minutes, or until internal temperature reaches 165°F (74°C) and skin is golden and crispy.
- Broil for 2–3 minutes at the end for extra crispiness, if desired.
- Garnish with fresh parsley and serve warm.
