  • 6 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 1/2 tsp paprika
  • 1/3 cup Dijon mustard
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 1 tbsp lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease or line a baking dish with parchment paper.
  2. Pat chicken thighs dry and season with salt, pepper, and paprika.
  3. In a small bowl, whisk together Dijon mustard, olive oil, garlic, honey, thyme, and lemon juice.
  4. Brush the Dijon mixture evenly over the chicken thighs.
  5. Arrange chicken skin-side up in the baking dish.
  6. Bake for 35–40 minutes, or until internal temperature reaches 165°F (74°C) and skin is golden and crispy.
  7. Broil for 2–3 minutes at the end for extra crispiness, if desired.
