Baked chipotle salmon sushi cups are crispy, spicy, and flavorful bite-sized sushi made with smoky chipotle salmon and seasoned rice, perfect for easy appetizers or quick meals.
Ingredients

- 2 cups cooked sushi rice
- 1 lb fresh salmon (skin removed)
- 2 tbsp mayonnaise
- 1 tbsp chipotle sauce or chopped chipotle pepper
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Nori sheets (cut into squares)
- Cooking spray or oil
- 1 tsp lime juice (optional)
- 1 tbsp cream cheese (optional)
- 1 tsp honey (optional)
Instructions
- Preheat oven to 400°F (200°C) and grease a muffin tin.
- Press cooked sushi rice into each cup to form a base and sides.
- In a bowl, mix salmon, mayonnaise, chipotle sauce, soy sauce, sesame oil, garlic powder, salt, and pepper.
- Spoon the salmon mixture evenly into each rice cup.
- Add small pieces of nori if desired.
- Bake for 12–15 minutes until rice is slightly crispy and salmon is cooked.
- Remove from oven and let cool slightly.
- Add optional toppings like avocado or sesame seeds.
- Serve warm.
