  • 1 large round cob loaf (sourdough or crusty white bread)
  • 1 wheel of brie cheese (about 78 oz)
  • 1 cup cranberry sauce (homemade or store-bought)
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme (or rosemary)
  • Salt and pepper to taste
  • Optional garnish: extra herbs, toasted nuts, honey drizzle, or pomegranate seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. Cut off the top of the cob loaf and set it aside. Hollow out a circular section in the center of the bread, just large enough to fit your wheel of brie. Tear the removed bread into bite-sized pieces.
  3. Place the brie wheel into the hollow center of the loaf. Spoon cranberry sauce over the top of the brie, spreading it evenly. Sprinkle with thyme, salt, and pepper.
  4. Brush the inside of the loaf and the bread pieces with melted butter mixed with garlic powder. Arrange the torn bread pieces around the loaf on the tray.
  5. Bake for 20–25 minutes, or until the bread is golden brown and the brie is fully melted.
  6. Place the cob on a serving board surrounded by the toasted bread pieces. Serve immediately while the cheese is gooey and irresistible. Garnish if desired.

Notes

  • Let brie sit at room temperature for 20 minutes before baking for even melting.
  • Avoid overbaking; brie should be creamy, not oily.
  • Use a sturdy cob loaf or sourdough to support the melted cheese.
  • Wrap leftovers tightly in foil and reheat at 325°F for 10–15 minutes.
