Bake Pumpkin Cheesecake Bars: 1 Easy Fall Recipe

  • Author: basmer
  • Total Time: 4 hours 20 minutes
  • Yield: 9 bars 1x
  • Diet: Vegetarian

Description

These no-bake pumpkin cheesecake bars offer a creamy, spiced pumpkin filling on a buttery graham cracker crust. They are simple to make in just 20 minutes, perfect for fall gatherings.

Ingredients

Scale
  • For the Graham Cracker Crust:
  • 2 cups packed graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Pumpkin Cheesecake Filling:
  • 16 oz cream cheese, softened
  • 1 cup canned pure pumpkin puree
  • 1/2 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 cup whipped topping, plus extra for garnish

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving overhang.
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar until like wet sand.
  3. Press the crumb mixture firmly into the prepared pan to form the crust.
  4. Chill the crust in the refrigerator for 30 minutes.
  5. Beat the softened cream cheese until completely smooth.
  6. Add pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, and salt to the cream cheese. Mix until well combined and uniform in color.
  7. Gently fold in the whipped topping with a spatula until just combined, maintaining airiness.
  8. Spread the pumpkin cheesecake filling evenly over the chilled crust.
  9. Smooth the top with a spatula or the back of a spoon.
  10. Refrigerate for at least 4 hours, or preferably overnight, until set.
  11. Use the parchment overhang to lift the slab out of the pan.
  12. Slice into 9 bars. Garnish with extra whipped cream if desired before serving.

Notes

  • Use 100% pure pumpkin puree, not pumpkin pie filling.
  • For a firmer texture, freeze for 1 hour before serving.
  • Store leftovers covered in the refrigerator for up to 5 days.
  • These bars taste even better when made a day in advance.
