No Bake Nutty Chocolate Cookies are a quick and easy treat made with oats, cocoa, and nut butter.

- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1/2 cup peanut butter (or any nut butter of your choice)
- 3 cups quick oats
- 1 cup chopped nuts (walnuts, almonds, or pecans)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, combine the granulated sugar, cocoa powder, milk, and unsalted butter.
- Cook over medium heat, stirring constantly until the mixture comes to a rolling boil. Allow it to boil for 1-2 minutes without stirring.
- Remove the saucepan from heat.
- Stir in the peanut butter, vanilla extract, and a pinch of salt until smooth.
- Add the quick oats and chopped nuts, mixing well to combine.
- Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. You can shape them into rounds or leave them as mounds.
- Place the baking sheet in the refrigerator for about 30 minutes, or until the cookies are set and firm.
- Once set, the cookies are ready to enjoy! Store any leftovers in an airtight container in the refrigerator.
