Instructions
- In a mixing bowl, combine the chocolate cookie crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form a crust.
- Place the crust in the refrigerator to chill while preparing the filling.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Fold in the shredded coconut and chopped pecans until evenly distributed.
- Gently fold in the whipped topping until the mixture is light and fluffy.
- Remove the chocolate cookie crust from the refrigerator.
- Spoon the cream cheese filling into the crust, spreading it evenly with a spatula.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set.
- Once chilled, slice the pie and garnish with additional whipped topping, chopped pecans, and chocolate shavings or drizzle if desired.
