- 4 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 cup heavy cream, whipped
- 1 cup dragon fruit, chopped (about 1 medium dragon fruit)
- Fresh mint leaves for garnish
Instructions
- Prepare the crust by mixing graham cracker crumbs with melted butter until evenly coated. Press into mini cheesecake molds.
- In a bowl, blend cream cheese and granulated sugar until smooth. Gently fold in whipped heavy cream.
- Add chopped dragon fruit to the mixture and combine.
- Spoon the filling over the crusts and tap gently to remove air bubbles.
- Cover with plastic wrap and chill in the fridge for at least four hours or overnight.
- Once set, remove from molds and garnish with fresh mint leaves.
