Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup heavy cream, whipped
  • 1 cup dragon fruit, chopped (about 1 medium dragon fruit)
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter until evenly coated. Press into mini cheesecake molds.
  2. In a bowl, blend cream cheese and granulated sugar until smooth. Gently fold in whipped heavy cream.
  3. Add chopped dragon fruit to the mixture and combine.
  4. Spoon the filling over the crusts and tap gently to remove air bubbles.
  5. Cover with plastic wrap and chill in the fridge for at least four hours or overnight.
