Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 45 fresh jalapeños, finely chopped (seeds removed)
  • 15 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. Mix the softened cream cheese, shredded cheddar cheese, crumbled bacon, and chopped jalapeños in a medium bowl until well combined.
  2. Lay an eggroll wrapper on a clean work surface with one corner pointing toward you and place about 2 tablespoons of filling in the center.
  3. Fold the bottom corner up over the filling, then fold in both side corners toward the center.
  4. Dab a small amount of water along the edges of the top corner and roll the eggroll up tightly to seal.
  5. Heat vegetable oil in a large pot or deep fryer to 350°F.
  6. Carefully lower 3-4 eggrolls into the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
  7. Remove the eggrolls with a slotted spoon and drain on a paper towel-lined plate.
