- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 4–5 fresh jalapeños, finely chopped (seeds removed)
- 15 eggroll wrappers
- Vegetable oil for frying
Instructions
- Mix the softened cream cheese, shredded cheddar cheese, crumbled bacon, and chopped jalapeños in a medium bowl until well combined.
- Lay an eggroll wrapper on a clean work surface with one corner pointing toward you and place about 2 tablespoons of filling in the center.
- Fold the bottom corner up over the filling, then fold in both side corners toward the center.
- Dab a small amount of water along the edges of the top corner and roll the eggroll up tightly to seal.
- Heat vegetable oil in a large pot or deep fryer to 350°F.
- Carefully lower 3-4 eggrolls into the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
- Remove the eggrolls with a slotted spoon and drain on a paper towel-lined plate.
