  • 1 ripe avocado, sliced
  • 1 cup shredded cheddar cheese
  • 4 slices of bread (your choice)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: chopped cilantro or green onions for garnish

Instructions

  1. In a bowl, mix the shredded chicken with BBQ sauce until well-coated.
  2. Heat a skillet over medium heat and add 1 tablespoon of butter, allowing it to melt.
  3. On one slice of bread, layer BBQ chicken, avocado slices, and shredded cheddar cheese.
  4. Place a second slice of bread on top to complete the sandwich.
  5. Carefully place the sandwich in the heated skillet. Grill for about 3-4 minutes on one side until golden brown.
  6. Add another tablespoon of butter to the skillet, then flip the sandwich and grill the other side for an additional 3-4 minutes until the cheese is melted and both sides are golden.
  7. Sprinkle with salt and pepper to taste while grilling.
  8. Once cooked, remove the sandwich from the skillet and let it cool for a minute. Slice in half to reveal the gooey goodness inside.
