Description
This Autumn Shaved Brussels Sprouts Caesar Salad with butternut squash, apples, parmesan, and maple walnuts is a cozy, seasonal fall salad.

- 1 lb. Brussels Sprouts, trimmed + shaved thinly
- 1–2 cups Your fave greens, optional
- 2 cups Roasted butternut squash
- 1 medium honeycrisp apple, thinly sliced
- 1/2 cup shaved parmesan cheese
- garlic herb croutons
- Caesar dressing
- 1 cup halved walnuts, roughly chopped
- 3 Tbsps pure maple syrup
- 1 Tbsp water
- 1/2 tsp smoked paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice

- In a saucepan over medium-high heat, add the roughly chopped walnuts along with the maple syrup, water, smoked paprika, cinnamon, and allspice, stirring to combine. Bring to a slight boil, then reduce heat to low to allow everything to simmer as you continue to stir, about 2-3 minutes. Remove from heat once walnuts become glaze-like and sticky.
- Start by washing the Brussels Sprouts with cold water and white vinegar and pat dry. Then trim the woody ends and remove damaged outer leaves. For best results, use a sharp chef’s knife to slice them in half lengthwise, then thinly slice them crosswise. NOTE: Alternatively, you can use a food processor with a slicing disc for speed, or a mandoline for precision.
- In a large serving plate or salad bowl, add the shaved Brussels Sprouts + your fave greens (mixing them together) followed by the sliced apples, roasted butternut squash, spiced maple walnuts, croutons, and parmesan shavings.
- To serve, add the salad to your favorite bowl(s), drizzle with Caesar dressing and additional favorite toppings like shredded chicken, roasted chickpeas, candied bacon, etc. if desired for extra protein and flavor.
