- 1 lb Sausage (Use high-quality sausage for better flavor.)
- 8 oz Bow tie pasta (Cook according to package instructions.)
- 2 cup Brussels sprouts (Trimmed and halved.)
- 2 cup Butternut squash (Peeled and cut into bite-sized pieces.)
- 2 tbsp Butter (For sautéing garlic and sausage.)
- 2 clove Garlic (Minced.)
- Salt to taste
- Pepper to taste
- 2 tbsp Olive oil (For roasting vegetables.)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash and Brussels sprouts into bite-sized pieces.
- On a baking sheet, toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper. Roast for about 20-25 minutes until tender.
- In a large pot, cook the bow tie pasta according to package instructions.
- In a skillet, cook the sausage over medium-high heat until it is browned.
- In the same skillet, add butter and garlic; sauté until fragrant.
- Combine the cooked pasta, roasted vegetables, and sausage in the skillet. Toss well to coat.
- Serve hot and enjoy your hearty meal!
