Description

Ingredients

  • 1 lb Sausage (Use high-quality sausage for better flavor.)
  • 8 oz Bow tie pasta (Cook according to package instructions.)
  • 2 cup Brussels sprouts (Trimmed and halved.)
  • 2 cup Butternut squash (Peeled and cut into bite-sized pieces.)
  • 2 tbsp Butter (For sautéing garlic and sausage.)
  • 2 clove Garlic (Minced.)
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Olive oil (For roasting vegetables.)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash and Brussels sprouts into bite-sized pieces.
  3. On a baking sheet, toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper. Roast for about 20-25 minutes until tender.
  4. In a large pot, cook the bow tie pasta according to package instructions.
  5. In a skillet, cook the sausage over medium-high heat until it is browned.
  6. In the same skillet, add butter and garlic; sauté until fragrant.
  7. Combine the cooked pasta, roasted vegetables, and sausage in the skillet. Toss well to coat.
  8. Serve hot and enjoy your hearty meal!
