Ingredients

  • 400 g Spaghetti or other pasta (Use your preferred pasta type.)
  • 150 g Pancetta (Crisped for the best flavor.)
  • 4 large Egg yolks (Fresh for optimal creaminess.)
  • 100 g Parmesan cheese (Grated for easy melting.)
  • to taste Black pepper (Freshly cracked preferred.)
  • to taste Salt (For cooking pasta and seasoning.)

Instructions

  1. Cook the pasta according to the instructions on the package until al dente.
  2. In a skillet over medium heat, cook the pancetta until it becomes crispy.
  3. In a mixing bowl, whisk together the egg yolks, grated Parmesan cheese, and freshly cracked black pepper.
  4. Drain the pasta and reserve a small cup of the starchy pasta water.
  5. Quickly toss the hot pasta with the cooked pancetta and the rendered fat from the pan.
  6. Remove from heat and stir in the egg mixture, using the reserved pasta water as needed to create a smooth and creamy sauce.
  7. Serve immediately with additional grated Parmesan cheese and a sprinkle of black pepper.
