- 400 g Spaghetti or other pasta (Use your preferred pasta type.)
- 150 g Pancetta (Crisped for the best flavor.)
- 4 large Egg yolks (Fresh for optimal creaminess.)
- 100 g Parmesan cheese (Grated for easy melting.)
- to taste Black pepper (Freshly cracked preferred.)
- to taste Salt (For cooking pasta and seasoning.)
Instructions
- Cook the pasta according to the instructions on the package until al dente.
- In a skillet over medium heat, cook the pancetta until it becomes crispy.
- In a mixing bowl, whisk together the egg yolks, grated Parmesan cheese, and freshly cracked black pepper.
- Drain the pasta and reserve a small cup of the starchy pasta water.
- Quickly toss the hot pasta with the cooked pancetta and the rendered fat from the pan.
- Remove from heat and stir in the egg mixture, using the reserved pasta water as needed to create a smooth and creamy sauce.
- Serve immediately with additional grated Parmesan cheese and a sprinkle of black pepper.
