Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix all-purpose flour and salt. Cut in the cold, cubed butter until it resembles coarse crumbs. Gradually add ice water until the dough holds together.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough on a floured surface until it’s about 1/8 inch thick and large enough to fit on your baking sheet. Transfer to a parchment-lined baking sheet.
  5. Boil salted water and add the asparagus pieces for 2-3 minutes until they turn bright green. Quickly transfer them to an ice bath to stop the cooking process, then drain well.
  6. In a bowl, whisk together heavy cream, eggs, garlic powder, salt, and pepper. Stir in crumbled goat cheese until well combined.
  7. Pour the mixture over the rolled-out dough, leaving a 2-inch border all around.
  8. Arrange the blanched asparagus artfully on top of the filling.
  9. Carefully fold the edges of the dough over the filling, pleating it as you go.
  10. Drizzle with olive oil and sprinkle extra goat cheese on top before baking.
  11. Bake for 25-30 minutes, or until the crust is golden brown and the filling is set.
