Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix all-purpose flour and salt. Cut in the cold, cubed butter until it resembles coarse crumbs. Gradually add ice water until the dough holds together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the chilled dough on a floured surface until it’s about 1/8 inch thick and large enough to fit on your baking sheet. Transfer to a parchment-lined baking sheet.
- Boil salted water and add the asparagus pieces for 2-3 minutes until they turn bright green. Quickly transfer them to an ice bath to stop the cooking process, then drain well.
- In a bowl, whisk together heavy cream, eggs, garlic powder, salt, and pepper. Stir in crumbled goat cheese until well combined.
- Pour the mixture over the rolled-out dough, leaving a 2-inch border all around.
- Arrange the blanched asparagus artfully on top of the filling.
- Carefully fold the edges of the dough over the filling, pleating it as you go.
- Drizzle with olive oil and sprinkle extra goat cheese on top before baking.
- Bake for 25-30 minutes, or until the crust is golden brown and the filling is set.
- Cool slightly, then garnish with fresh herbs and serve warm or at room temperature.
