Description
Delicious Arabic Chicken and Rice (Kabsa) is a fragrant one-pot dish that beautifully marries tender chicken with aromatic spices and fluffy Basmati rice.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 large onion, finely chopped
- 2 cups Basmati rice
- 1 can (14 oz) diced tomatoes
- 2 tsp cumin
- 2 tsp coriander
- 1 cinnamon stick
- 4 cups chicken broth
- Fresh parsley or cilantro for garnish
Instructions
- Begin by prepping ingredients: chop onions and mince garlic.
- In a large pot, heat oil over medium heat. Sauté onions until golden brown (about 5 minutes). Add minced garlic and cook for another minute.
- Add chicken breasts to the pot and sear until golden brown on both sides (about 5 minutes per side).
- Stir in cumin, coriander, and the cinnamon stick, cooking until fragrant.
- Pour in diced tomatoes followed by Basmati rice and chicken broth. Ensure liquid covers the rice by about an inch.
- Bring to a boil, then reduce heat to low, cover tightly, and simmer for 20 minutes. Once liquid evaporates, fluff with a fork before serving.
