Description

These Apricot Brie Chicken Sandwiches are a summer-inspired delight that’s perfect for a quick lunch or main course.

Ingredients

Scale
  • 2 slices Bread (preferably slightly toasted)
  • 2 tablespoons Mayonnaise (or roasted garlic and thyme aioli)
  • 1 cup Arugula (can be swapped with spinach or mixed greens)
  • 4 tablespoons Apricot Preserves (key ingredient for sweetness)
  • 1 cup Chicken Breast (cooked and shredded)
  • 4 slices Brie Cheese (alternatives like camembert or goat cheese can be used)
  • ¼ cup Red Onion (or shallots for milder flavor)

Instructions

  1. Preheat your oven’s broiler to high and line a baking sheet with parchment.
  2. Toast both sides of the bread until golden brown, about 2-3 minutes per side.
  3. Spread mayonnaise or aioli on one slice of toasted bread and layer with arugula.
  4. On the second slice, spread apricot preserves, then layer with shredded chicken, red onion, and brie.
  5. Broil the sandwich for 2-3 minutes until the brie melts.
  6. Remove from the oven, combine the two slices, and cut in half for serving.
